Description

This Vietnamese-inspired sweet and spicy turkey sandwich combines leftover turkey with lemongrass, garlic, lime, and sweet chili sauce in a toasted baguette.


Ingredients

2 stalks lemongrass

1 clove garlic

2 cups cooked turkey, shredded

1/4 tsp turmeric

1 tbsp fish sauce

2 tbsp lime juice

1 tbsp peanut oil

1 large French baguette

1/4 cup mayonnaise

1/3 cup grated carrots

1 bunch cilantro leaves, stems discarded

2 tbsp sweet chili sauce


Instructions

1. Cut and discard the tough root end of the lemongrass. Coarsely chop the light yellow part only. Pulse with garlic in a food processor until finely chopped.

2. In a bowl, mix the lemongrass/garlic with shredded turkey, turmeric, fish sauce, and lime juice. Heat a skillet with peanut oil over medium heat.

3. Add the turkey mixture to the hot skillet and sauté for 5–6 minutes until aromatic and heated through.

4. While cooking, slice the baguette in half and warm it in the oven.

5. Spread mayonnaise on both halves of the warm baguette.

6. Fill the baguette with turkey mixture, grated carrots, cilantro leaves, and drizzle with sweet chili sauce.

7. Cut into 4 equal sections and serve warm.

Notes

You can substitute leftover chicken for turkey if needed.

For extra heat, add sliced jalapeños or a dash of sriracha.

Serve with pickled daikon and carrots for an authentic touch.
