Ingredients
- Mango purée (fresh or frozen) – Delivers natural tropical flavor and vibrant color.
- Heavy cream – Adds richness and smooth texture
- Sweetened condensed milk – Provides sweetness and creamy consistency
- Whole milk – Balances richness for a lighter scoop
- Sugar (optional) – Boosts sweetness if mangoes aren’t very ripe
- Egg yolk (optional) – Adds creaminess and helps bind the mix
- Vanilla extract – Gives warmth and rounds out the mango flavor
- Lime zest (optional) – Brightens with citrus note
- White chocolate chips or bar – Forms the shell coating
- Coconut oil – Helps chocolate melt and harden
- Yellow food coloring (optional) – For bright mango-like appearance
- Strawberry powder – Sprinkled on top for flavor and decoration
Instructions
1. Blend mango purée, heavy cream, condensed milk, whole milk, vanilla extract, and lime zest until smooth.
2. (Optional) Heat ½ cup of the mix with egg yolk until slightly thickened, then stir back in.
3. Pour into a loaf pan, cover, and freeze 6–8 hours.
4. Melt white chocolate with coconut oil in 30-second bursts, stirring each time. Add yellow coloring if desired.
5. Scoop frozen ice cream into balls, freeze 30 more minutes, then dip into chocolate.
6. Sprinkle strawberry powder before the shell hardens.
7. Serve immediately or store in an airtight container up to 1 week.
Notes
For a dairy-free version, swap heavy cream with full-fat coconut cream, condensed milk with sweetened condensed coconut milk, and use vegan white chocolate. For a lower sugar option, choose very ripe mangoes and omit added sugar. Internal link idea: Try my No Added Sugar Mango Lassi Smoothie for another tropical mango treat.
