Description
This copycat Costco stuffed peppers recipe is quick, hearty, and easy to customize. Perfect for busy weeknights or freezer-friendly meal prep.
Ingredients
4 large bell peppers (red, yellow, or green)
1 lb ground beef (or turkey/plant-based alternative)
1 cup cooked white or brown rice
1 medium onion, diced
2 garlic cloves, minced
1 can (14.5 oz) diced tomatoes, drained
1 cup shredded cheese (mozzarella, cheddar, or blend)
½ cup tomato sauce
1 tsp salt
½ tsp pepper
½ tsp paprika
½ tsp ground cumin
1 tsp dried parsley or basil
Instructions
1. Preheat oven to 375°F (190°C).
2. Cut the tops off the bell peppers and remove seeds. Set aside.
3. In a skillet over medium heat, sauté onion and garlic until translucent.
4. Add ground beef and cook until browned. Drain excess fat.
5. Stir in cooked rice, diced tomatoes, half of the cheese, tomato sauce, and seasonings.
6. Spoon filling into each bell pepper and place them in a baking dish.
7. Top with remaining cheese and a spoonful of tomato sauce if desired.
8. Cover with foil and bake for 30 minutes. Uncover and bake for 10–15 more minutes.
9. Remove from oven and let cool for 5–10 minutes before serving.
Notes
You can prepare the filling ahead and refrigerate for up to 2 days.
Swap ground beef for turkey or lentils to make it leaner or vegetarian.
Air fry option: Cook at 350°F for 20–25 minutes, checking halfway through.
