Ingredients
4 large bell peppers (red, yellow, or green)
1 lb ground beef or turkey
1 cup cooked rice
1 small onion, diced
2 garlic cloves, minced
½ cup chopped tomatoes (optional)
1 cup shredded cheese (cheddar, mozzarella, or blend)
Salt and black pepper to taste
Herbs of choice (parsley, basil, or oregano)
Olive oil for cooking
Instructions
1. Preheat oven to 375°F (190°C).
2. Wash and dry the bell peppers. Cut off the tops and remove seeds and membranes.
3. Optional: Boil peppers for 5 minutes for a softer texture, then set aside to cool.
4. In a skillet, heat olive oil over medium heat. Add ground meat and cook until browned. Drain excess fat.
5. Add onion, garlic, and chopped tomatoes. Cook for 2–3 minutes.
6. Stir in cooked rice, salt, pepper, and herbs. Mix well and cook until warmed through.
7. Grease a baking dish and place peppers upright. Fill each with the hot mixture.
8. Cover with foil and bake for 30 minutes.
9. Uncover, top with cheese, and bake for 10 more minutes until melted and golden.
10. Let rest for 5 minutes before serving. Garnish with fresh herbs if desired.
