- 2 flour tortillas (8-inch)
- 2 large eggs
- ½ cup shredded cheese
- 1 cup fresh spinach (chopped)
- 1 tbsp olive oil or butter
- ¼ tsp garlic powder
- Salt and pepper to taste
- ½ avocado, sliced
- Hot sauce (optional)
Instructions
- Sauté Spinach: Heat ½ tbsp olive oil in skillet; cook spinach with garlic powder, salt, and pepper until wilted.
- Assemble Quesadilla: Place one tortilla in pan, layer half cheese, spinach, rest of cheese, then top with second tortilla.
- Crisp & Flip: Cook 2–3 min per side until golden and cheese melts.
- Fry Egg: In separate pan, fry egg in remaining oil until done to preference.
- Top & Serve: Place fried egg on quesadilla, add avocado slices, and drizzle with hot sauce.
Notes
Substitute with gluten-free tortillas or vegan cheese. Add beans or meat to customize.
