Description

Ingredients

  • 2 flour tortillas (8-inch)
  • 2 large eggs
  • ½ cup shredded cheese
  • 1 cup fresh spinach (chopped)
  • 1 tbsp olive oil or butter
  • ¼ tsp garlic powder
  • Salt and pepper to taste
  • ½ avocado, sliced
  • Hot sauce (optional)

Instructions

  1. Sauté Spinach: Heat ½ tbsp olive oil in skillet; cook spinach with garlic powder, salt, and pepper until wilted.
  2. Assemble Quesadilla: Place one tortilla in pan, layer half cheese, spinach, rest of cheese, then top with second tortilla.
  3. Crisp & Flip: Cook 2–3 min per side until golden and cheese melts.
  4. Fry Egg: In separate pan, fry egg in remaining oil until done to preference.
  5. Top & Serve: Place fried egg on quesadilla, add avocado slices, and drizzle with hot sauce.

Notes

Substitute with gluten-free tortillas or vegan cheese. Add beans or meat to customize.
