Description

A light, fresh salad made with ribboned carrots, herbs, and a zesty dressing. Perfect as a side dish or quick lunch.


Ingredients

8 cups carrot ribbons (from 810 large carrots)

1 cup fresh parsley, chopped

1 garlic clove, grated

Zest and juice of 1 lime

2 tbsp extra virgin olive oil

2 tbsp soy sauce

1/2 tsp black pepper

1½ tbsp toasted sesame seeds


Instructions

1. Peel the carrots into thin ribbons using a vegetable peeler.

2. In a large bowl, mix parsley, garlic, lime zest, and juice.

3. Add olive oil, soy sauce, sesame seeds, and black pepper. Stir to combine.

4. Add carrot ribbons to the bowl and toss gently until fully coated.

5. Taste and adjust seasoning if needed.

6. Serve immediately or let sit 10–15 minutes for flavors to develop.

Notes

Optional add-ins: toasted sesame oil, mint or cilantro, feta, chopped nuts.

Pairs well with grilled meats or grain bowls.
