Ingredients
1 cup avocado oil
1 large egg (room temperature)
1 tablespoon lemon juice or apple cider vinegar
1 teaspoon Dijon mustard
¼ teaspoon sea salt
Optional: garlic, honey, cayenne, fresh herbs
Instructions
1. Add all ingredients to a tall, narrow jar in the listed order.
2. Place immersion blender at the bottom, over the egg.
3. Blend on high speed without moving for 10–15 seconds.
4. When the mixture at the bottom thickens, slowly lift blender upward.
5. Continue blending until the mixture is thick and fully emulsified.
6. Adjust seasoning or consistency as needed.
7. Transfer to a jar and refrigerate. Use within 5–7 days.
Notes
Use room-temperature ingredients for best emulsification.
To recover broken mayo, blend a new yolk and slowly add the failed batch.
Experiment with herbs, spices, or lemon zest to create unique variations.
